Cauliflower Chickpea Masala

This Cauliflower Chickpea Masala is a total family favourite, so warming, hearty and full of the power of plants! I love using this vibrant spice blend with a variety of different veggies depending on what I have on hand for a simple but always crowd pleasing dinner. The Recipe

Ingredients

Spice Mix

2 Tbsp garam masala
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp smoked paprika
1/4 tsp cayenne
1/2 tsp salt
1/4 tsp Freshly Cracked Pepper

 

Curry

1 white onion
3 cloves garlic
1/2 Tbsp grated fresh ginger
2 Tbsp olive oil
1 cauliflower
1 can chickpeas
1 can of passata
1 can coconut milk
100g basmati rice
100g of spinach

Directions

Combine the spice mix

Heat the oil

Add the onion and fry for 5 minutes

Add the garlic and ginger, stir for 30seconds

Add the spice blend, cauli and chickpeas, stir for another 30 seconds

Add the coconut milk and passata

Simmer for 20 minutes.

While the curry is simmering prepare your accompaniments, rinse and boil the rice according to package instructions and wilt your spinach in a pan with olive oil.
