Lentil Meatballs with Squash Sauce

These Lentil Meatballs with Squash Sauce are the perfect dinner for the whole family. With heaps of veggies in the velvety sauce and flavourful meatballs they are a great way to introduce new flavours and amp up the nutrition of a classic and comforting dish. They are also vegan, gluten free and nut free and work really well as a batch cook as they can be frozen and defrosted for an easy and comforting meal whenever you need.
The Recipe
Ingredients
Meatballs
1 can of lentils
100g of chopped mushrooms
4 tbsp of chickpea flour
1 tsp of cumin
2 crushed garlic cloves
2 spring onions
1 tbsp of olive oil
Olive oil for cooking
Squash sauce
1 squash
2 cloves or garlic
1 can of coconut milk
1 tbsp of ginger
Directions
preheat the oven to 180C
Blend the meatball ingredients and roll into balls.
Add olive oil to a baking tray
Place the balls on top and roll in the oil.
Bake for 20 minutes.
While they are cooking chop the squash into cubes removing the skin.
Place in a pot with the ginger, garlic and coconut milk.
Simmer until the squash is cooking through then blend.
serve together
