Spicy Vegetable Skewers

These Spicy Vegetable Skewers are the perfect addition to any barbecue. They take just a few minutes to prepare and thanks to the gochujang in the marinade pack in loads of delicious spicy flavour. I’ve served mine with a creamy yogurt dressing that balances out the spice and brings the whole dish together. I hope you love making this dish!
The Recipe
Ingredients
1 tbsp of gochujang
1 tbsp of sesame oil
1 tbsp of tamari
2 crushed garlic cloves
2 tbsp of tomato concentrate
pinch of salt
1 tbsp of mirin
1 courgette
1 red pepper
1 yellow pepper
1 aubergine
Yogurt dressing:
100g of yogurt
2 tbsp of chopped coriander
salt
1/2 lemon juiced
To Serve: Naan or Pitta Bread, Watercress
Directions
Preheat the oven to 200c or fire up the BBQ
Mix the marinade ingredients together.
Chop the veg into evenly sized chunks and coat with the marinade before placing on skewers.
Roast in the oven for 15 minutes until cooked through or on the bbq for 7-9 mins.
Mix the dressing ingredients together.
Layout the bread and top with the greens followed by the skewers and dressing
