Vegan Thai Red Meatball Curry

Sometimes when you’re feeling groggy, doing the things you LOVE and that make you happy, turn your day brighter. Even if that means cancelling on plans, to do what’s right for you. Cooking makes me happy and so do this Vegan Thai Red Meatball Curry . I hope you love them as much as I do. Enjoy. Xx

The Recipe

Ingredients

Balls
1 can of black beans rinsed
100g of porridge oats
1 tbsp of cashew butter
1 garlic clove
1 tbsp of red Thai curry paste
1 tbsp of tamari
1 tbsp of grated ginger

Curry

1 tbsp of red Thai curry paste
1 can of coconut milk
1 tsp of tamari
1 lime juiced

Directions

For the bean balls – Blend everything together and roll into balls. Bake in the oven at 200 C for 15 mins.

Place the coconut milk, tamari, thai red curry paste and half the lime juice in a pot. Add the balls and simmer for 10 mins.

Serve with rice and kale.
