Green Goddess Salad Dressing

Are you ever looking for a way to use up the herbs in your fridge? Why not make your own green goddess dressing, great for salads or dipping! This dressing is green glorious and full of goodness.

It can be quite a thick dressing so you want to toss it in with the lettuce greens, to just lightly coat the salad before serving. It’s also a great spread on rice cakes or with crudités.

 

The Recipe

Ingredients

1 cup of Basil Leaves

1 cup of Spinach Leaves

2 cloves of Garlic

1 small Shallot

Juice of 2 Lemons

1/4 cup of Olive Oil

1/4 cup of Nuts of your choice (I used Cashews and Walnuts)

1/3 cup of Nutritional Yeast*

1 teaspoon of Salt

2 tablespoons of Rice Vinegar 

Any extra Chives (optional)

Directions

So simple, just add all of the ingredients into a blender and blitz until smooth. This can be stored in a jar in the fridge for up to 3 days.
