Spiral Cucumber Salad

POV: You’re looking for a new way to eat cucumbers!

Inspired by the oh-so-delicious Chinese Cucumber Salad, I have been seeing this Spiral Cucumber Salad all over my timeline recently and I couldn’t resist giving it a go myself. Simple, fresh, crunchy and so full of flavour this has become the perfect side dish for our dinners at home recently.

I’d like to encourage you, do not to be put off by the spiral formation of the cucumber. It was so simple to create – you just need 2 chopsticks and a sharp knife.

The Recipe

Ingredients

1 cucumber

2 tbsp of sesame oil

2 tbsp of tamari or soy sauce

1 tsp of crushed garlic or 2 crushed garlic cloves

1 tbsp of minced ginger 

1 pinch of salt

2 tbsp of rice vinegar

2 tbsp of chilli oil

sesame seeds to finish

Directions

Start by washing your cucumber and placing flat between 2 chopsticks. Then, begin slicing the cucumber vertically, using the chopsticks as a guide to prevent you from slicing all the way through. Moving your knife about 2 cm each slice, continue along the whole cucumber.
Once you’ve reached the end, flip the cucumber over, adjust your knife to a 45-degree angle and begin slicing – again, stopping at the chopsticks and moving the knife about 2 cm between each slice.

Once sliced set aside.

To make the dressing, in a large bowl whisk the dressing ingredients together.

Add in the sliced cucumber, stirring gently so as to not break it apart.

Once mixed, pop it in the fridge to absorb for a few hours, then serve with sesame seeds sprinkled on top.
