Carrot and Quinoa Soup

This Carrot & Quinoa Soup is full of immunity boosting ingredients to help you stay healthy during this period of crazy weather! I’ve been making big batches of soup like this weekly and enjoying it for a delicious and warming lunch during my working day. You could even double up the recipe and freeze batches for a super comforting meal whenever you need it.

The Recipe

Ingredients 

1 onion, finely chopped

1 tbsp of olive oil

2 sliced garlic cloves

1 tbsp of grated ginger

1 tsp of cumin

500ml of vegetable stock

400g carrots

100g of quinoa

1 can of coconut milk

½ lime juice

Salt

Directions

Fry the onion for 5 minutes in olive oil
Add the garlic and ginger to the onion and stir for a minute.
Toss in the chopped carrots and allow them to brown followed by the cumin and seasoning
Pour over the stock and coconut milk and simmer for 20 minutes
Add in the quinoa and simmer for a further 20 minutes, puree to your desired texture and serve with yogurt, herbs and toast.
