Gluten-free Mince Pies

When you think of Christmas, of course, you think of Mince Pies. Why not try this year to make your own using a selection of fresh ingredients you can easily grab from your local shop and in my opinion is even tastier than the classic Mr Kipling. Christmas is the best time of year to stock up on spices and get creative in the kitchen.

Pair with a hot mulled wine and you have yourself the perfect festive treat. I also love that these are gluten-free using almond flour creating that crispy, nutty pastry.

 

The Recipe

Ingredients

For the Almond Pastry:

200g ground almonds

1 pinch of salt

1/2 tsp of baking powder

1 tbsp of maple

20g of butter or coconut oil

1 egg

 

Minced fruit:

2 apples, chopped

100g of raisins

100g of currants

1 pinch of salt

1/4 tsp of nutmeg

zest and juice of 2 oranges

1 tsp of mixed spice

Directions

To make the pastry, mix everything in a bowl and roll it into a ball. Leave in the fridge for 30 minutes, then roll out in some flour.

Add the minced fruit ingredients into a pan and simmer for 30 minutes.

Grease the muffin tray and add the pastry to each hole and top with the minced fruit.

With any excess pastry create shapes and add them to the top of the pie.

 Place in the oven and bake at 180C for 20 minutes.
