Sweet Potato And Walnut Brownies
Brownies for me have always been a guilty pleasure, if I see one I can’t resist having 1 or 10! That’s why I love making these sweet potato brownies, they still have the delicious rich and gooey texture but with the added bonus of incredible health benefits as sweet potatoes are a great source of fibre.
Ingredients
2 tbsp of cocoa powder
2 eggs
50g of brown sugar
3 tbsp of coconut oil or butter
1 pinch of salt
1/2 cup of walnuts
1/2 cup nut butter
1 large sweet potato
Directions
Preheat the oven to 170C and cook the sweet potatoes.
Once cooked, mash the cooked sweet potato in a bowl, then add the egg, sugar and nut butter and stir well.
Add in the rest of the ingredients, leaving half of the walnuts and keep mixing.
Pour the mixture into a lined baking tray and top with the remaining walnuts.
Bake for 30 minutes then leave to cool.
Cut them up and leave them in an airtight container.
