Sticky Figgy Cake
I’ll be honest – Christmas pudding just isn’t really my thing. But this year, I’ve got something better up my sleeve: this sticky figgy cake. This delicious cake is made with ground almonds, and is topped off with fresh, juicy figs. It’s not just good; it’s ridiculously delicious. Trust me, after your big Christmas feast, this cake is the pudding you’ll want, and it will have everyone coming back for more.
The Recipe
Ingredients
*200g unsalted butter
*200g sugar
*3 large free range eggs
*270g ground almonds
*½ tsp salt
*1 Tsp of vanilla extract
*100g Greek yoghurt
*8-12 figs, halved
Drizzle
*2 lemons
*50g of sugar
*50g of maple
*1 tsp of vanilla extract
Directions
*Preheat the oven to 175C
*In a food processor mix together the butter and sugar. Then add the eggs, followed by the almonds, salt, vanilla and the yogurt. When the mixture is fully combined leave to one side
*Grease a cake tin with butter and pour in the mixture. Place the figs in a circular pattern in the cake. Bake for 1 hour.
*When it comes out of the oven allow the mixture to cool in the tin.
*Add your ingredients for the drizzle to a small pan and bring to the boil, once boiling reduce to a low simmer, and stir for a few mins. Then pour over the cake. Serve with yogurt or ice cream, and enjoy!
