This Miso Kale & Avocado Lunchbox is incredible and bursting with flavour. Full of an amazing source of protein to power through the day and essential vitamins to keep you feeling healthy! Bung any leftover food into the salad to make sure no food is going to waste. Enjoy. Xx

The Recipe

Ingredients

40g of kale, sliced
1 can of lentils, drained
1/2 avocado, sliced
50g of sun-dried tomatoes, sliced
50g of olives
3 tbsp of pumpkin seeds

Dressing:
1 tbsp of miso paste
1/2 like juiced
2 tbsp of sesame oil

Directions

Mix the dressing together, I just use a spoon. Then mix all of the ingredients into a bowl one by one.

Place in a lunchbox and keep refrigerated!
