Turmeric Coconut Broth with Crispy Tofu, Wild Rice & Veg

This delicious turmeric coconut broth with crispy tofu, wild rice and veg is an all year round sort of dish! It’s packed full of antioxidants to keep your immune system strong, full of flavour and is a real heart-warming recipe. You have to give it a go. If carrot and broccoli aren’t your thing then use the veggies you have in the cupboard. Enjoy.
The Recipe
Ingredients
Broth
1 can of coconut milk
200ml of water
1 thumb if grated ginger
2 crushed garlic cloves
1 tsp of turmeric
1/2 chopped red chilli
1 lime
1 tbsp of tamari
Tofu
1/2 pack of tofu, pressed and drained
1 tsp of sesame oil
1 pinch of chilli powder
1 pinch of garlic powder
1 big pinch of salt
1 carrot, julienned
100g cooked wild rice
1/2 broccoli steamed
Sliced chilli and spring onion go top
Directions
Broth – place all Ingredients other than lime in pot and simmer for 20 mins.
Tofu – Heat the oil in a pan. Cut the tofu into squares and rub in spices. Fry until golden all over.
Plate together and serve warm with lime juice.
