Ultimate Greek Salad

There is nothing better than a good Greek salad. With sun ripened tomatoes, crunch cucumber and crumbled feta. This recipe takes less than 5 minutes to make and it’s great for prepping your lunchbox for tomorrow.  If you’re vegan, Violife do an amazing vegan feta, you must try it! Enjoy.

P.s. Serve with warm pitta if you need some more fuel!

The Recipe

Ingredients

1/2 cucumber
3-4 tomatoes
1/2 pack of feta
100g of kalamata olives
Olive oil
Pinch of dried oregano
Salt and pepper

Directions

Cut the tomatoes into 1/4 and the Cucumber in half then into moon slithers around a cm thick.

Mix together with the feta. Use your hand t pull into chunks and allow the rest to crumble over.

Add in the olives, oregano, a drizzle of olive oil and finish with some salt and pepper.
